Agar

Explanation

Agar is extracted from red algae, such as Gelidium or Gracilaria. The main components are Agarose of neutral polysaccharide and Agaropectin of acidic polysaccharide. Agar completely dissolves in water above 90°C and the solution forms gels at room temperature.
Agar is a natural vegetable gelatin counterpart. White and semi-translucent, it is sold in dried strips or in powdered form.

Applications

jellies, sweet jellies of red beans, glazing, icing, topping, fillings of baked goods, spreading jams, sauces, dressings, mayonnaise etc.
