Tamarind Gum

Explanation

Tamarind gum is obtained from endosperm of seeds of the tamarind tree. The gum consists of glucose in the main chain, and xylose and galactose are combined in the branching side. There are two types in which one dissolves in cold water and the other in hot water. The gum shows stable viscosity in the wide pH range. The gum helps create elastic gel within the specific range of sugar concentration and alcohol.
