Gelatin

Explanation

Gelatin is a derivative of natural protein called collagen which are found in the skins, tendons, and bones of animals that can be obtained by treating hot water. Gelatin swells in cold water and becomes sol in warm water, then it forms elastic gels that is generally called jelly. Using its coagulability, it is widely used for making shapes or giving hardness. The molecular weight is in the range of 15,000 to 25,000 and it composes ununiformed mass in organic solvents which is insoluble. Unlike collagen, gelatin reacts to trypsin or pepsin.
